• Position Title: Onsite Handmade Dumpling Specialist
• Working Location: Central
• Working Hours: 45 hours per week (Weekdays)
• Salary Package: Basic + AWS + Allowance + Performance Bonus
• Duration: Permanent

Key Responsibilities

• Prepare and demonstrate handmade Chinese dumplings such as jiaozi, siu mai, and har gow at the station.
• Prepare dumpling dough, skins, and fillings from scratch using traditional recipes and techniques.
• Produce sufficient dumplings to support daily service requirements.
• Demonstrate folding and pleating techniques to guests when required.
• Coordinate with the Chef de Partie on dumpling varieties, fillings, and cooking methods.
• Prepare pork and no-pork-no-lard dumpling options based on menu requirements.
• Guide kitchen assistants on basic dumpling preparation, handling, and storage.
• Maintain cleanliness, hygiene, and presentation standards at the demonstration area.
• Store uncooked dumplings properly and ensure safe food handling practices.
• Advise on ingredient quality, dough ratios, and filling recipes to maintain consistency.

• Experience in handmade dumpling preparation is required.
• Experience in Chinese cuisine or dim sum preparation is preferred.
• Able to prepare dough, fillings, and dumplings from scratch.
• Skilled in dumpling wrapping, folding, and pleating techniques.
• Good understanding of food hygiene and kitchen safety.
• Responsible, hands-on, and able to work in a fast-paced kitchen environment.
