Job Description

Responsibilities:

Operational

  1. Design, develop and update menus with creativity and cost efficiency

  2. Analyse recipes, determine food, manpower and overhead costs to determine menu pricings for approval

  3. Check and approve requisitions based on planned menus and estimated food consumption to minimize wastages

  4. Oversee daily kitchen operations, including food preparation, cooking and plating, to ensure consistent food quality and presentation, and meet established standards and practices

  5. Manage food costs, manpower costs and inventory

  6. Works closely with Purchasing to locate reliable suppliers offering competitively priced raw food items while maintaining quality standards.

  7. Coordinate with management on budgeting, forecasting, and special events

  8. Enforce food safety and hygiene standards in compliance with local and legal regulations

  9. Maintain high standard of cleanliness in the kitchens and monitor kitchen equipment maintenance and recommend repairs or replacements

  10. Manage members/guests feedback related to food quality and presentation to rectify situations and ensure a high patronage

  11. Check and approve staff work schedules according to operational needs, manpower requirements, and planned events

  12. Lead, train, and supervise kitchen staff; foster a positive and disciplined work environment

Staff Development & team management

  1. Ensure all employees report for duty punctually and wear the correct uniform

  2. Contribute to the development of an efficient team by taking an active interest in their welfare, safety and development

  3. Ensure that all employees have a complete understanding of and adhere to the Club’s policy relating to fire, hygiene, health and safety

Requirements:

  • Minimum GCE “O” Level qualification with at least five (5) years’ experience in Food & Beverage operations, with practical knowledge of F&B service concepts

  • Excellent team player who is able to multi-task and adhere to tight deadlines

  • Able to work independently, proactive and highly meticulous

  • Strong people and communications, both verbal and written

  • Possess thorough knowledge of the beverage list
