We are seeking a skilled and passionate Baker specializing in Japanese bakery products, donuts, and salt bread (Shio Pan). The successful candidate will be responsible for preparing, baking, and maintaining high-quality bakery products while ensuring consistency, food safety, and efficient daily operations.
Key Responsibilities
- Prepare and bake a variety of Japanese-style bakery products, including: Japanese donuts and filled donuts, Salt bread (Shio Pan) Japanese buns etc.
- Mix, proof, shape, and bake dough according to established recipes and quality standards.
- Monitor fermentation, baking times, and product consistency.
- Ensure high standards of product quality, presentation, and freshness.
- Manage ingredient preparation, stock rotation, and inventory control.
- Maintain cleanliness and hygiene in accordance with SFA food safety regulations.
- Minimize wastage and support cost-control initiatives.
- Assist in the development of new bakery products and seasonal offerings.
- Train and guide junior bakers and kitchen assistants when required.
- Ensure smooth daily bakery operations and timely production schedules.
Requirements
- Minimum 2 years of baking experience, preferably in Japanese bakeries, artisan bakeries, or specialty bread production.
- Experience in donut production, dough fermentation, and bread-making techniques.
- Strong knowledge of Japanese bakery products, including Shio Pan and enriched doughs.
- Familiar with food safety, sanitation, and kitchen hygiene standards.
- Ability to work early morning shifts, weekends, and public holidays.
- Good teamwork, time management, and organizational skills.
Preferred Qualifications
- Experience in Japanese bakery operations.
- Knowledge of dough development, fermentation control, and bakery production planning.
- Ability to create new bakery products and seasonal menu items.
- Leadership or supervisory experience in a bakery environment.
